CAJUN CLUB SANDWICH

2 SLICES ROAST BEEF
2 SLICES SMOKED TURKEY
2 SLICES SMOKED HAM
2 STRIPS CRISP BACON
2 SLICES JACK CHEESE
OPTIONAL: SLICED AVOCADO
LEAF LETTUCE
2 SLICED TOMATO
2 TBSP.* CAJUN MAYONNAISE (RECIPE TO FOLLOW)
PANE TURANO SLICED
HOME MADE ROUND SLICED

* CAJUN MAYONNAISE
1 CUP MAYONNAISE OR YOUR FAVORITE SALAD DRESSING
1 TSP. CAJUN SEASONING
1 TSP. GROUND CUMIN
1/2 TSP. CHILI POWDER
1 TBSP. LEMON JUICE
MIX ABOVE 5 INGREDIENTS IN A BOWL AND ALLOW TO SET BEFORE USING. MAY BE MADE DAY BEFORE (LASTS UP TO 3 WEEKS IN REFRIGERATOR)

GRILL OR TOAST BREAD. SPREAD INSIDE SLICE BREAD WITH MAYO, THEN LAYER WITH BEEF, HAM, LETTUCE, BREAD (WITH MORE MAYO), TURKEY, CHEESE, BACON, (AVOCADO), TOMATO AND MORE MAYO, COVER, CUT ON A DIAGONAL AND SERVE.

WHAT A KICK YOU WILL GET OUT OF THIS!


HAWAIIAN CHICKEN SANDWICH

6 OZ. CHICKEN BREAST (boneless and skinless)
2 TBSP. TOASTED SHREDDED COCONUT
SHREDDED LETTUCE
SLICED TOMATO
1 TBSP. HONEY MUSTARD

PLACE CHICKEN BETWEEN 2 PIECES OF PLASTIC WRAP AND FLATTEN WITH TENDERIZER OR MALLET. SPRINKLE WITH SALT AND PEPPER.

HEAT 1 TBSP. COOKING OIL TO MEDIUM HOT, SAUTÉ CHICKEN TILL BROWN ON BOTH SIDES (ABOUT 3 MIN. PER SIDE) REMOVE FROM HEAT, SET ASIDE.

MEANWHILE, ON A COOKIE SHEET TOAST COCONUT AT 350 DEGREES UNTIL GOLDEN BROWN.

TOAST ROLL THEN SPREAD WITH HONEY MUSTARD, CHICKEN, COCONUT, SHREDDED LETTUCE AND SLICED TOMATO. SPREAD INSIDE LID WITH A LITTLE MUSTARD COVER AND SERVE.
